    sbs 2003 to 2008r2

    ok, so i am about to add another 2008r2 server to our existing domain (sbs 2003 dc, and a 2008r2 file server). I plan to add the new 2008 r2 server as a second dc then demote the sbs 2003 server from a dc. are there any issues i should look out for?

    basically, the sbs2003 exchange gets our mail forwarded from some shitty plesk interface that i have no idea how it works. will i need to install exchange 2007 or 2010 onto one of our servers? or can i keep the sbs 2003 server and its exchange as a simple server on the domain and uninstall all the othe crap that comes with the sbs 2003 server package?

    (i've never worked with sbs servers before)

    I suspect that you ought to seriously consider a swing migration for this. I've used it successfully going from plain Windows 2003 Server to SBS. Though I've not personally done it, I imagine you can also use it to go from SBS 2003 to Server 2008. It is super easy to follow. You can go to sbsmigration.com and check the same for more information.
