As per my information you have to use Jubler for your mac to edit subtitle. Jubler is a tool to edit text-based subtitles. It can be used as an authoring software for new subtitles or as a tool to convert, transform, correct and refine existing subtitles. The most popular subtitle formats can be used. Preview of the subtitles in realtime or in design time, spell checking, translation mode and styles editing are some of the main features.

You have to use D-Subtitler for your mac. Software D-Subtitler is a small program that can extract the subtitles from a DVD and put them in a file in Srt.
The SRT is recognized by most Divx players (including standalone players).
D-Subtitler supports two types of source: VOB files and folders VIDEO TS. D-Subtitler allows you to rip tracks of subtitles to your DVD intuitively. No obligatory passage through various hacks and use the terminal. Everything is done by the interface of D-Subtitler:
    * extracting subtitles as images
    * converting images into text using a handwriting recognition
    * display characters not recognized and the context in which they are using the interface
    * small built-in editor for correcting mistakes othographe File SRT final

You have to use SubBits subtitler for your mac. It has following features.
Fast text editor with all shortcuts a text editor needs
    - Works with (about) all video formats!
    - Keyboard control over the video simultaneous to typing titles
    - Option to move multiple titles together
    - Option to save comment with titles
    - Option to swap all comment and titles for second language translation without re-timing
    - Option to switch between Pal, NTSC, and 23.976 for format conversion
    - Instant preview of your work
    - Timeline trimming
    - Render Engine to output to bitmaps for any NLE and / or bitmap files for DVD
    - Render Engine does Quicktime with Alpha, and does that extremely FAST! (Nice if you work on Avid!)
    - Spell-check via your favorite program
    - Import Export of FCP XML
