I have tried to update my Windows XP SP2 with Microsoft Windows Installer 3.1
several times, both through automatic and manual update, but it always fails
with this error code: 80072EE2. All other updates work just fine. Any
suggestions?

This is one of the "timeout" exceptions.
You made doubly sure your system had correct time / date / timezone?
Using a proxy server? Any 3rd-party software firewall? Do you have any
3rd-party popup ad-blocker? or anonymizer utility?
Is AOL your internet provider?
That particular error is HTTP Error 504 - Gateway Timeout.
Fot that, it's generally best to wait a bit and try later on.
If AOL is your ISP, make sure you only use Internet Explorer to get to
Windows Update website.
You make your usual AOL connection, then....bring up Internet Explorer & go
to this site
https://v5.windowsupdate.microsofÂ*t.com
Even if you're not on AOL, try using that address at least once.
