How can you compare the two you can't do that. Centos is a Enterprise Linux OS whereas Fedora is a developmental OS. Even the support for Centos 4.0 will be till 2012, and Fedora Core 4 will be supported only till the end of this year.
Fedora is not a good choice for servers, its a fast pace development OS. There is a New Core every year, and it order to get full support you need to upgrade your server OS every year. With Centos 4.0 you could run your server until 2012 and never have to worry about upgrading the OS.
If I was building a new server I would use Centos.
Fedora is not so stable by design - seriously, it's purpose is to be used more for testing as compared to CentOS which is an enterprise level OS based on Red Hat - so it's got to be stable.

With regards to updates Fedora is nice but loses a small amount of stability the reason for this being, fedora very tightly wrapped into the core of most linux development but being so close to the core means that it can adapt to changes and updates with minimal testing.
CentOS updates slower, but when it does the updates are more stable since they are tested more exhaustively and have CentOS specific edits and patches made as needed.
On personal preference i would like to go for CentOS for Server or for desktop it will be Fedora (not so bad).
