Re: Nokia N73 Gallery application gets open on its own
According to me you need to uninstall ALL Nokia related applications, and ALL other applications that you might use to work with the phone (such as third-party phone management applications. The phone doesn't seem to handle software closing (for ram purposes) very well much like the older firmware N80's (and other S60 3E phones).
Re: Nokia N73 Gallery application gets open on its own
You could try a factory restore on the handset. If this fails you would need to book it in to your nearest Nokia Repair center for it to have a firmware update. It is apparent that when certain applets on the phone(such as contacts, call logs, etc) are accessed and then "exited" the phone doesn't actually close these applets and thus they continue to exist in ram gradually building up usage.

I think your handset is been affected with viruses. For that you need to connect your handset to your computer then need to download the Nokia PC Suite Registry Cleaner, and select the option "Cleaning My Computer". Restart the computer after this process is finished, even though the application does not ask you to do so. Hope so it might resolve your above issue.
Re: Nokia N73 Gallery application gets open on its own
For that you need to update your profile with your exact handset model and current firmware version, it all comes up on the screen when you enter *#0000# from standby. It's possible the phone will shut these applets down after a while of idling(untested yet) but somewhere something goes wrong.

If all the above does seems to be working for you, then the best way to resolve your above issue is to take your Nokia N73 handset to the near by Nokia service center. Their technicians might be able to resolve your above issue.
