You can use iPod-Linux Installer. This project is to create an easy to use GUI program that enables Mac OS X user with iPods to install linux on HFS+ formatted iPods while still allowing users to keep and use the Apple Supplied OS. Currently this project supports 1G, 2G, and 3G iPods. 4G, Mini, and Photo iPods are now supported. Installation on Nano and 5G iPods is possible with this installer but no support will be given for these iPods! Make absolutely sure you back your files up if you are using a post 3G iPod as this is an alpha installer release.
You can use some program like Cocktail or Tinker Tool, that enable your to hide folders, the music on the iPod is located in hidden folders) All you have to do is drag the music from your iPod to your computer's hard drive, reinstall the OS, and then put the music in EXACTLY the same place you found it on your iPod.
You can also use a program (there are a ton of them, like iPodRip (Mac only)) to take the music off your iPod. Reinstall the OS and then put the music back on.
The simplest is to connect the iPod to iTunes and then in the player window, you click on restore. It will reset everything after you have deleted.
