I think that you might have chosen the same as they are the recommended ones but then I think that i7-2860 will be a better choice as it is capable of supporting 10 physical cores as well as 10 logical cores, where as the ones that has been mentioned above supports only a total of 12 cores, if you want then you can try out the below chart for more information:

I completely agree to you about the cores, I think that just seeing 3 GHz and thinking power is not what we should look out for, it is really hard to balance out the cores/ lower MHz vs higher GHz / lower core count as well, even I think that i7-2860 will be a better option here. I will like to add that you will need more than 32 GB RAM for using Intel Xeon Processor X5675 where as i7-2860 just needs 32 GB RAM per CPU and that will be a better choice, hope you understood the difference.
