If you do not disturb the power, you do not much value put on video acceleration and it does not bother you that not all CUDA programs to run, then obviously the 8800 GTX, which thanks to its high bandwidth and 768MB partly significantly from the 8800 GTS 512MB.
I'd go with the EVGA 8800 GTS 512 the performance difference is negligable and right now its cheaper, if you are pretty confident you will use step up and you are sure a better card will be here in 90 days, go for the GTX saves you spending extra money later ... but if you were jsut keeping the cards and wanted the 8800 GTS 512 is good enough not to have to spend the extra money.
Some games do not support SLi, One high performance card should be all you need.
