You will need to go through Move Project if you want to move the start date in the Project Information dialog. The advantage of Move Project is that everything in the project is moved with respect to its original offset from the project start date. For example, in this project task b has a deadline 5 days into the project and task c has a constraint to start 2 days after the project’s start date.

My problem is I want to manage the project in days not hours, but for some reason every time I select a date from the date control (on any form) the control just displays the time part.
I am using Project 2010 Pro. To change the task duration units in a project go to File>options>schedule. Under the heading 'Scheduling options for this project' change the units for 'Duration is entered in:' and 'work is entered in:' to whatever you need.
I'm guessing you mean that the date/time shows just time -- no date.
In Project 2007 or earlier:
Tools > Options, View tab. Under date format select a format that shows date/time or just date.
In Project 2010:
File > Options, General, Project View - date format.
As a general comment, you should not be entering dates (or selecting them from the date control) unless you are using Manually scheduled tasks in Project 2010.
