If price isn't an issue, go with the Intel. Vertex seems to be a solid drive, but the X25-M is simply that much faster. The X25-M has also been on the market for a significant amount of time, so its steady-state performance characteristics are much better known.
I do believe that some members of the T60 series have bandwidth caps on the SATA bus; you may not be able to utilize all of either drive's sequential read and write speeds, but you should still benefit from the fantastic IO performance of the X25-M.
I have been am using an OCZ Vertex 120G in my new MacPro for two weeks now, without a single issue. Applications usually start after one "hop".
No stuttering issues.
I am using the free SATA port in the second optical drive bay.
I'd say it depends entirely on budget, if you can afford the X25-M in the GB required go for it and if not then get the Vertex. As mentioned earlier, both will have their max seq. speeds capped by the T61 but that shouldn't hamper the very noticeable performance improvement you'll notice doing day to day tasks with the SSD.
