The best resolution is usually the highest one that your video card supports that doesn't make the text on your screen too small to read. With LCD monitors it is best to use the native resolution. The higher the resolution, the more pixels your screen will display. The more pixels you have, the more visual space you'll have, so you can see more cells in a spreadsheet, or see more windows side-by-side. In the Windows display settings, slide the slider all the way to the right and that will be the native resolution. Also, turning on cleartype will improve the quality of the text. In the Appearance tab, press the Effects button and select cleartype from the fonts drop down box.
