Incase you are using Internet browsers as your email client, then you cannot assign a browser as a default email client, because it is not an email client, it is an Internet browser.
You will need to use an actual email client, and then you will be able to select a non email client as your default email client. You can use Outlook Express or Outlook, Thunderbird, etc; all of these are proper email clients and all can be used to IMAP or POP with Gmail. Incase you like getting your email via the web interface then I suggest IMAP on a client. Check the below instructions:

I know this thread is from 2008, but I figured since people search and run across this, I don't want them to think the previous answers are true....
You can easily use GMAIL as your windows default mail client....
Just download the gmail notifier and select the option "use gamil for internet mailto: links.
This is the same for yahoo etc.... Yahoo's toolbar has the same feature.!!!
