For accuracy you should go for FCEUX,, it is considered to be one of the most accurate. But looking at the other way all the NES emulation are so dam mature that almost all of the major emulators can be pretty much 100% accurate.
I will advice you to go for Nestopia , reason it got the Hq4x graphics filter.It is really awesome. it cant be erfectly accurate, since it's an improvement over the original, but you can use graphics filters so that the games look good on a modern high-resolution monitor.
This accurate emulation does come at a cost; Nestopia requires a minimum of a 600MHz machine for full speed; but if you have one, this the best available NES emulation for Mac. The concept behind FCEUX is to merge elements from FCE Ultra, FCEU rerecording, FCEUXD, FCEUXDSP, and FCEU-mm into a single branch of FCEU. FCEUX is written for two platforms: SDL and Win32. The two ports have some significant differences. The Win32 port has an extensive set of native gui amenities and tools. The SDL port supports many of the features of the Win32 build. New cheat dialog features and improvements. Nestopia is the current king of the NES emulation hill. It uses highly optimized cycle exact emulation, allowing it to run titles that rely on precise timing, many of which break under inferior emulators. Option to mute sound when running in alt. speed mode.

I use FCEUX but I've been getting annoyed with all the LUA junk that's been included with it. I tried Nestopia and the hq4x is def the best graphics filter of the two.
I heard about ubernes today which associated box art and information about all your NES games. That sounds like the next generation of NES emulators.
Unless there's a separate program that can do that.
I just started using ROMcenter which is such a lifesaver.
