Type the following command: defaults write com.apple.dashboard MCX-disabled-boolean YES

For the dashboard back on again, type the following:

    To turn Dashboard off:

defaults write com.apple.dashboard mcx-disabled -boolean YES

    To turn Dashboard on:

defaults write com.apple.dashboard mcx-disabled -boolean NO

You have to restart the Dock after making either change for it to take effect:

    killall Dock

If you don't like Dashboard taking up precious real estate on your dock, click and hold and choose "Remove from Dock" to banish it.
