I am looking for a way to modify the default zoom size intended for the Full Screen mode within Word 2011? You can't customize the Zoom default within Full Screen mode within Word 2011. You are able to set as well as store the Zoom level within Page Layout mode, except not during Full Screen Mode. Full Screen Mode does not encompass whichever "settings" now.

I'm afraid you cannot. Unlike the 'normal' page layout view, for it is sufficient, the original of each document template file (for 'empty' documents so usually the Normal.dotm) with a modified zoom factor to re-save, such a change results for the full-screen display anything. Probably is not the appropriate setting in the template, but in the Preferences (perhaps in com.microsoft.Word.plist) are stored.

That may well be the current version of Office is 2011. Is there even in full screen (for me especially nasty with a black background) left button: Writing (or something like that) when you click the one you can write. But a full picture, as covering the entire surface, you're not using Word, but just this black desktop and in the midst of the "leaf". Choose wrap but prefer the design view and in settings / view / rows to Window, then you have a real full screen.
