Can I use iPhone without SIM card after activation?

I have an Apple Iphone and want to know certain aspects. The thing is I want to know whether my phone would be able to function accordingly well if I bring a new phone form AT&T and put the sim in new phone can my Iphone work as an Ipod. Will I be able to use it. Please do help me out so that I can make the issue to be sorted and work well with the same.
