Server 2003 & Dos Application

Hello. I have had a new server installed (windows server 2003). We used to run Netware 5.12 - the problem I am facing now is that the 2 applications that our server company relies on are dos applications. one is a c language frontend with a dbase3 backend. regardless of "write a new program" suggestions - staff are too ensconced to change. the proble is that these programs - the other is an accpac program - are so slow on the new server. more ram has been added - max at 3.5 gigs (most server will read) - performance monitor showss cache, disk write, all memory objects nearly maxed - any suggestions.
