You can try to scan it in as a graphic and insert it, check if that works.

Might sound like a stupid question but how do I scan as graphic?
I have scanned it as a picture before (my scanner only gives me 3 options anyway, PDF, XPS, and JPEG). But then when i come to insert it I can't get it to fit in the table where it needs to be and the white background keeps from being able to "bring it in front of text"... I don't know how to make the white background transparent,..

You can do that by photoshop. You will a need a bit knowledge of how to create layers. Second thing you can try using a digital pen if possible to create your signature. If there is some kind of important document then you must services like Digital Signatures they are used to authenticate your documents. Just inserting an image cannot be safer for official documents.
