I don't know the shortcut but you can create a macro of the following method. Record a Macro for this click on Data > Sort. Select the first criterion: 'Date of borrowing' (default Excel uses the column headings). You can choose to present the latest top of the list. To do this, choose 'Descending'. - Then select the name (ascending order), then the first name (same). This was for columns. Now for rows go to the menu Data > Sort. Click the Options button. Under direction, choose From left to right. Then select your sort criteria, such as line 2 in our case to sort the column alphabetically. Click on OK. The columns were moved to be arranged in alphabetical order.
I don't think there is a shortcut for that. I will recommend you to setup filtering in excel which will help you to quickly short your data without wasting much time. The filtering option is easy to setup and it is very handy also.
