the best gaming ram are ocz, they make modules ranging from 533mhz up to the maximum gaming modules of 1800mhz
the OCZ DDR3 PC3-14400 Platinum Edition has a amazing specification including a massive ddr3 pc3/14400 spped and CL 8-8-8-24 latency
basically these are the fastest consumer memory avalible today,however as with all new technology you need a ddr3 compatible motherboard,so check this before buying for ddr2 the OCZ DDR2 PC2-9600 FlexXLC Edition module has a speed of 1200mhz and latency of CL 5-5-5-18 and avalible in 2gb dual channel kits(2x1024mb)
finally for ddr memory the OCZ DDR PC-3200 / 400MHz / Special Ops Edition at first glance looks no faster than a normal pc3200 module these modules have higher latency and perform much better and more stable than the average memory.

if you gonna take my opinion; Go for the kingston rams they are good
look for a 1333 mhz very hard to find but super fast...
or else
if you want something good ,overclockable,fast and stable i advise you to go for the corsair's dominator.
latancy has a little effect on performance. High frequency memory will help if you overclock. If you don't overclock save some money and just get the fastest memory that officialy supported by your platform of choice as spode says DDR2 800. Another thing that can save your money on memory is going for ram without heatspreaders as these are shown to offer only a few mhz advantage, maximum while overclocking.
crucial is certified to run 1000mhz @ 5-5-5-15
i have the crucial tracer pc2 6400 @ 4-4-4-12 @ 1066mhz.......
