High-Definition Multimedia Interface (HDMI) is a compact audio/video interface for transmitting uncompressed digital data. HDMI supports on a single cable, any TV or PC video format, including standard, enhanced, and high-definition video; up to 8 channels of digital audioso basically it can carry audio and video so audio and the video are multplexed over the same set of pins so you can use it..

Only the HDMI and able to carry its 7.1 type cables spdif limits them to 5.1 but for pc .Now It depends on your display device and especially your receiver if that supported HDMI then you need to connect a cable from DVD player to receiver to get sound. HDMI carries audio and video only on receivers called HDMI repeater.
The HMDI is a SCART digital ie it sends audio and video. However if your DVI source is by definition without cable so it will take your sound card on your amp with the appropriate connectors so make sure device having such connectors
