Hi , Both cables allow the 360 to carry a HD signal to your TV (or computer monitor.)
VGA cable only supports up to720p, whereas the HDMI cable will support 720p, 1080i and 1080p. HDMI also provides a better picture over VGA or Component Video.
Note that the Component Video cable that comes with the 360 is also capable of carrying HD signals up to 1080p as well. However, some TVs only accept up to 1080i over component video. If you really want 1080p, you have to use the HDMI cable.
Most of the 360's content is only in 720p. Some of the downloadable content is in 1080p - as is HD-DVD, if you're interested in buying the HD-DVD add-on drive.
It is advisable to use use the HDMI cable. If your TV (or 360) does not support HDMI, I would definitely go with the Component Video cable. Leave the VGA port on your TV for your computer.
Vga is very good for hdtv's and even the 360, but because it was originally a pc output it provides much better resolutions as pc resolution exceed hdtv 1920x1080 maximum.
Vga on the xbox 360 will allow up scaling on normal dvd's up to 720 or 1080 as vga does accept these resolution, on vga they won't be displayed as 720p or 1080i but rather 1280x720 and 1920x1080
Hdmi is best as it is digital and does not convert the video signal it receives. Component and Vga both being analog will receive digital hd sources, convert to analog then reconvert to digital. Hdmi does not convert but depending upon the resolution you set the xbox 360 to it will upscale.
